Production Process

Extraction – Once cooked, the Piñas are crushed to extract their juices. This process can be done using a Tahoma, a large stone wheel, or a mechanical shredder. The extracted juice, known as Aguamiel, is then fermented.

Distillation –  The Mosto undergoes double distillation in copper pot stills, a crucial step that refines and concentrates the alcohol content. The resulting distillate is clear and potent, known as blanco or silver tequila.

Aging (Optional) – Some tequilas are aged in oak barrels to enhance their flavor and character. The duration of aging varies, with categories such as Reposado (rested), Añejo (aged), and Extra Añejo (extra aged), each offering distinct profiles.

Unique Flavors
Tequila’s flavor profile is as diverse as the landscapes of Mexico, ranging from vibrant and herbaceous to complex and oaky. The nuances in taste are influenced by various factors, including the agave variety, terroir, production methods, and aging process.
